Vitamins and Minerals Demystified

Dr. Steve Blake
See book keywords and concepts
Orotic acid has not been proven to be essential for human nutrition so it is not officially a vitamin. Its functions are similar to vitamin B12 and it enhances the usefulness of vitamin B12 and folate. Many of the vitamin-like effects of orotic acid are undoubtedly due to its role in RNA and DNA synthesis. Orotic acid acts as one of the best mineral transporters. It is able to transport minerals such as calcium though the cell membrane and directly to the mitochondria. PARA-AMINOBENZOIC ACID (PABA) Para-Aminobenzoic Acid (PABA) is sometimes referred to as a B vitamin.

Tips on Using Avocados SELECTION AND STORAGE: • Choose avocados that are soft to the touch but not too soft. • Hass avocados turn black when they are ripe. • Other varieties require a slight squeeze to determine if they are ripe. • Ripe avocados should be kept in the refrigerator.

Food Synergy: Unleash Hundreds of Powerful Healing Food Combinations to Fight Disease and Live Well

No need to add vitamin E to increasing fish intakes," says Richard Deckelbaum, MD, a lipid researcher and director of the Institute of human nutrition at Columbia University in New York. However, if you decide to boost dietary intake of EPA and DHA through supplements, experts advise taking an optimal intake of vitamin E (400 IU) as well. In fact, the fish oil supplements now add vitamin E. The incredible dynamic between omega-3s and vitamin E is a great illustration of food synergy at work.
PhD, professor of food science and human nutrition at the University of Illinois at Urbana-Champaign. He decided to start looking at foods in combination as a way to learn more about real diets eaten by real people. "People don't eat nutrients, they eat food. And they don't eat one food, they eat many foods in combination," he explains. Studies that examine individual nutrients in isolation are really not designed to tell us anything about the interactions that occur between those substances, much less between foods that each contain their own anti-disease arsenals. Another approach to measuring DNA oxidative damage that has been evaluated for use in human nutrition intervention research is the measurement of 5-hydroxymethyluracil levels in DNA in blood. 5-Hydroxymethyluracil is produced when DNA is exposed to oxidants, is relatively stable when compared to other oxidation products, and can be quantified with gas chromatography/mass spectrometry [66, 67]. At the same time, its high intraindividual variation reduces its utility as a biomarker [68].

Seelig MS, "Magnesium requirements in human nutrition." Magnes Bull, vol 3 (1A), pp. 26-47,1981 4 Both acute intake of alcohol and chronic alcoholism can have detrimental effects on magnesium nutriture. This review by Dr Richard S Rivlin of New York Hospital-Cornell Medical Center summarizes the evidence linking alcohol with magnesium deficiency and describes how this effect may contribute to the complications of alcoholism, including delirium tremens and liver cancer. Many studies have shown that the state of chronic alcoholism is associated with magnesium deficiency.
There are seventeen minerals that are considered essential in human nutrition and if there is a shortage of just one the balance of the entire system can be upset. A deficiency of a single mineral can negatively impact the entire chain of life, rendering other nutrients ineffective and useless. This theory describes completely the dynamics of human nutrition, transmutation, and certain aberrant phenomena that do not fit into any other theory of nutrition and human life. By using the framework of this wholistic paradigm, we can develop a penetrating understanding and practical application of a system of nutrition for spiritual development. The author invites readers to consider these new concepts as tools for understanding and not necessarily as dogmatic facts.

I've got news for you: low-fat is the flat-earth theory of human nutrition. See, all theories of weight loss fit into one of two major categories of thought—all of them. There is no exception to this rule. If you understand the two categories, you're immediately better informed than half the population on the subject of dieting and weight loss. Let's call category one the Thermodynamic View. It comes from the first law of thermodynamics, which basically says that what goes in must come out.

In addition, nuts and seeds provide excellent human nutrition, being especially good sources of essential fatty acids, vitamin E, protein, and minerals. Because of their high oil content, nuts and seeds are often used as sources of oils for use in culinary, medicinal, and cosmetic preparations. In this chapter, we will discuss some of the common nuts, seeds, and vegetable oils. Nuts, Seeds, and Oils: An Overview The word "nut" commonly refers to the shell-encased seeds of trees. There are more than 300 types of nuts, and every plant has a seed.
Flavonoids are sometimes considered "semi-essential" nutrients, but in our view they are as important to human nutrition as the so-called essential nutrients. Because they have a broader range of antioxidant activity, as well as other important anticancer effects, we recommend including as many different types of flavonoids as possible in your diet. Doing so will provide extra insurance that your body can mop up any type of free radical or oxidant that escapes the other protective systems. Recent research suggests that flavonoids may be useful in the support of many health conditions.

While it is outstanding nutrition for baby cows, it is nutritionally freakish when it comes to human nutrition. For some reason, everybody in the country continues to look at cow's milk as good nutrition. But in fact, in children it promotes chronic sinus problems, stagnation, constipation, hardening of the arteries and even heart disease. This is something that we should stop serving our children as quickly as possible. (The dairy industry would disagree, of course...) Soy Protein in human nutrition, a collection of papers read at a May 22-25, 1978 conference in Keystone, CO,17 tells a revealing soy story. The event was sponsored, in part, by Ralston-Purina, a major manufacturer of soy protein isolate, and brought together researchers who had been testing new methods of analyzing protein quality in humans. These methods measure nitrogen consumption and excretion because nitrogen is the element that exists in proteins but not in fats and carbohydrates. As we use up protein in our bodies, we excrete nitrogen in our urine and feces.
Investigators at the Department of Food Science and human nutrition at Iowa State University examined changes in menopausal symptoms in response to 24 weeks of isoflavone-rich diets, comparing women receiving about 80 mg isoflavones per day with a group receiving 4 mg per day and a group receiving none. They found no treatment effect on frequency, duration or severity of hot flashes or night sweats. As in the Australian study, all groups reported a decline in overall symptoms, indicating either a placebo effect or simply an improvement in symptoms during the study.

It is a controversy as to whether vanadium is an essential trace mineral in human nutrition. Although it has been suggested to function in hormone, cholesterol, and blood sugar metabolism, no specific deficiency signs have been reported. Some researchers have speculated that a vanadium deficiency may contribute to elevated cholesterol levels and faulty blood sugar control manifesting as either diabetes or hypoglycemia. Making things more difficult is the fact that vanadium exists in five different forms, with the most biologically significant being either vanadyl or vanadate.

Davis at the Grand Forks human nutrition Research Center in North Dakota have expressed concern about the potential for manganese toxicity in the growing ranks of vegetarians. Vegetarians eat more manganese because plant foods contain far more than animal foods. Vegetarians are also more likely to absorb more manganese because of zinc, calcium and iron deficiencies.50,51 Low-protein diets also contribute to manganese toxicity.52 All of these risk factors, of course, co-exist in people who eat a lot of soy. The soy industry is mostly in denial about the manganese problem in soy formula.
PROCESSING MATTERS In ideal circumstances, soybean lectins would not be a problem in human nutrition. They would be incapacitated before they even entered the human mouth, either by enzymes—such as those that are abundantly present in fermented soyfoods—or by heat, as in processing and cooking. Most of the negative findings on soy lectins have occurred after feeding uncooked soy-based chow to rats and other animals. Scientists have found that both lectins and trypsin inhibitors (see Chapter 16) are responsible for poor growth, pancreatic enlargement and digestive distress.
